When I was a little girl I used to eat so many Arancini (the classic Italian rice balls) and I&#8217;m always incredibly nostalgic when I remake them at home! Now without further ado, here comes the recipe&#8230;<\/p>\n<hr \/>\n<p><strong>Ingredients for the rice:<br \/>\n<\/strong>\u2022 200g cooked rice<br \/>\n\u2022 3 medium cooked artichokes<br \/>\n\u2022\u00a0\u00bd cup parsley<br \/>\n\u2022 2 crushed cloves of garlic<br \/>\n\u2022 1 tsp turmeric<br \/>\n\u2022 1 tsp curry powder<br \/>\n\u2022 2 tsp smoked paprika<br \/>\n\u2022 1 tsp fresh grated ginger<br \/>\n\u2022 2 tbsp extra virgin olive oil<br \/>\n\u2022 1 tsp salt<br \/>\n\u2022 1\u00bd tbsp flax meal<br \/>\n\u2022 1 tbsp sesame seeds<br \/>\n\u2022 1 tsp black pepper<br \/>\n\u2022 juice of 1\u00bd lemon<br \/>\n\u2022 2 tsp lemon zest<\/p>\n<p><strong>For the breadcrumb:<br \/>\n<\/strong>\u2022 4 tbsp breadcrumb<br \/>\n\u2022\u00a0\u00bd tsp smoked paprika<br \/>\n\u2022\u00a0\u00bd tsp salt<br \/>\n\u2022 1 tsp oregano<br \/>\n\u2022\u00a0\u00bc tsp chilli flakes<\/p>\n<p><strong>For the sauce:<br \/>\n<\/strong>\u2022 \u00bd cup plant based yogurt<br \/>\n\u2022 2 tsp apple cider vinegar<br \/>\n\u2022 1 tbsp extra virgin olive oil<br \/>\n\u2022\u00a0\u00bd tsp salt<br \/>\n\u2022 a bunch of chopped parsley<br \/>\n\u2022 juice of\u00a0\u00bd lemon<\/p>\n<p><strong>Preparation:<br \/>\n<\/strong>Mix all the rice ingredients in a large bowl and let it chill in the fridge for one hour. In the meanwhile prepare the sauce by whisking all the ingredients together and add all the spices to the breadcrumb. After one hour preheat the oven at 200\u00b0C , roll the rice mixture into balls (you may need to use wet hands) and coat them with the breadcrumb. Cook on a lined baking tray for 30 minutes or until golden brown.
